You might think this sounds like some kind of super-mushroom that they grow and harvest, but actually, this is their way to say that they create a meatless product from growing a type of mold and fermenting it in vats. In the words of the Center for Science in the Public Interest:

Wow. I really thought is was mushroom related. 🤢 I rarely eat it now but used to. Will stick to soy/tofu when going meatless from now on.
